PIRI PIRI IS A DRIED AFRICAN BIRDS EYE CHILLI. SMALL AND FIERY! THIS IS A DRY VERSION OF THE CLASSIC PORTUGUESE/AFRICAN WET SAUCE OR MARINADE (SEE BELOW) BUT CAN BE USED AS A DRY RUB OR SEASONING/SPRINKLE!
PIRI PIRI CHICKEN IS THE CLASSIC DISH WHICH HAS ITS ROOTS IN PORTUGAL. SCORE CHICKEN ALL OVER, ADD A TABLESPOON TO OLIVE OIL, A SPLASH OF RED WINE VINEGAR, LIME JUICE AND A PINCH OF SUGAR. MIX WELL TO A SAUCE BEFORE RUBBING INTO THE MEAT, MARINADE OVERNIGHT IN THE FRIDGE BEFORE COOKING.
